Film Cerdas Ramah Lingkungan dari Eceng Gondok dan Bunga Tapak Dara Sebagai Indikator Kesegaran Udang

Abstrak

Salah satu upaya untuk mengatasi sampah makanan yang menjadi isu global adalah dengan pelabelan produk pangan. Pelabelan kedaluwarsa pada produk pangan kurang efektif karena tidak memberikan informasi kepada konsumen tentang kualitas produk. Tujuan penelitian ini adalah membuat inovasi film bioplastik sebagai label cerdas  untuk solusi masalah tersebut. Konsumen cukup dengan melihat perubahan warna label sebagai indikator kesegaran pangan. Film cerdas dibuat menggunakan metode melt intercalation dengan mencampurkan serat eceng gondok, pati jagung, dan gliserin ke dalam air serta penambahan serbuk bunga tapak dara ke dalam campuran tersebut. Film cerdas memiliki sensitivitas terhadap derajat keasaman produk pangan yang diindikasikan dari perubahan warna yang signifikan dari merah (dalam suasana asam) menjadi kuning (dalam suasana basa). Hasil uji coba film cerdas pada kesegaran udang menunjukkan perubahan warna dari putih menjadi kuning kehijauan. Pengujian sifat mekanik menunjukkan bahwa film cerdas memiliki kekuatan tarik 19,62 MPa dan elongasi 8% serta memenuhi kriteria plastik mudah terurai berdasarkan SNI 7818:2014. Oleh karena itu, film cerdas yang ramah lingkungan dapat digunakan untuk mengindikasikan kesegaran udang.
