Focus and Scope
Food Scientia : Journal of Food Science and Technology is an open access and peer reviewed journal dedicated to the publication of research in all aspects of food science and technology.
Original research articles and Literature review articles written in Indonesian and features well-designed studies with clearly analysed and logically interpreted results are accepted, with a strong preference given to research that has the potential to make significant contributions to both the field of food technology and society in general.
Food Scientia is a scientific publication issued biannually by Food Technology Study Program of Universitas Terbuka (Open University of Indonesia) between January to June and July to December. This publication contains scientific articles in the scope of:
Food processing technology, food engineering, postharvest technology, biotechnology, food safety, food microbiology
Food industry management
Logistic and supply chain management, strategic management, food security
Food chemistry and nutrition
